You know I wouldn’t let cinco de mayo pass by quietly! I made my dad and I quesadillas (brown rice tortillas, roasted sweet potato, black beans, onions, daiya mozzarella, and some tofutti cream cheese) and salad (avocado, tomato, hearts of palm, green onion, lime, balsamic vinegar, and pepper).
